SWEET POTATO TOAST 4 WAYS

If you’re a vegan looking to fix a quick lunch you’ll most likely end up making a sandwich, probably with hummus or some kind of nut butter (as cliche as it sounds, this was my constant reality). Not bad, but what happens when you want something different? Something easy? Something fast and nutritious or even something that looks majestic on Instagram? How about all of the above?

 

Personally, we think that part of what makes food taste good comes from the knowledge of knowing that what you’re eating is actually good for you. Did you know that sweet potatoes for example contain high amounts of vitamin C and beta-carotene? That they’re also full of nutrients and have a low glycemic index, which doesn’t cause your blood sugar to spike? To top it off they are good for your hair, skin and immune system, not to mention they’ll keep you fuller longer and they won’t give you that all too familiar energy-dip.

 

The only thing you’ll need to reap all these health benefits are sweet potatoes, a grill iron or a toaster. Skip the typical 20 min oven hassle; your sweet potato toast will be ready in 5 minutes! What you decide to put on it afterwards it totally up to you, but we decided to give you a few yummy vegan options to inspire you.

 

Option 1: Sweet potato toast with herb spread and avocado

 What you’ll need:
• 1 slice of sweet potato with skin, approximately 0.5 centimeter thick
• Vegan herb spread
• ¼ avocado
• 2 garlic olives chopped in pieces
• A few pumpkin-seeds
• A few pomegranate seeds
• Salt & pepper

 

What to do:
1. Toast the sweet potatoes until it’s done using the grill iron or toaster. You can check if it’s done by poking it with a fork and seeing if it became softer. I personally use a grill iron which takes about 5 minutes to cook the sweet potato. If you’re using a toaster it will take you about 4 toast sessions, depending on your toaster.
2. Spread the herb spread on your toast, then garnish it with avocado and squash it on your toast so it’s spread evenly. Then top it off with the olives, pumpkin seeds, pomegranate seeds and sprinkle with salt and pepper.

 

 

Option 2: Sweet potato toast with hummus and sun dried tomatoes

 What you’ll need:

• 1 slice of sweet potato with skin, approximately 0.5 centimeter thick
• Your favorite hummus
• 2 olives chopped in pieces
• 1 sun-dried tomatoes chopped in pieces
• A dash of rosemary

 

What to do:

1. Toast the sweet potatoes until it’s done using the grill iron or toaster. You can check if it’s done by poking it with a fork and seeing if it became softer. I personally use a grill iron which takes about 5 minutes to cook the sweet potato. If you’re using a toaster it will take you about 4 toast sessions, depending on your toaster.
2. Spread the hummus on your toast and garnish with olives, sun-dried tomatoes and sprinkle with rosemary.

 

 

Option 3: Sweet potato toast with cashew butter and raisins

 What you’ll need:
• 1 slice of sweet potato with skin, approximately 0.5 centimeter thick
• (White) cashew butter
• Raisins
• Ground cinnamon

 

What to do:

1.Toast the sweet potatoes until it’s done using the grill iron or toaster. You can check if it’s done by poking it with a fork and seeing if it became softer. I personally use a grill iron which takes about 5 minutes to cook the sweet potato. If you’re using a toaster it will take you about 4 toast sessions, depending on your toaster. 

2. Spread the cashew butter on your toast, garnish with raisins and sprinkle with cinnamon.

 

 

Option 4: Sweet potato toast with peanut butter and banana

 What you’ll need:
• 1 slice of sweet potato with skin, approximately 0.5 centimeter thick
• Peanut butter
• A few slices of banana
• Optional: Cocoa nibs or raisins


What to do:
1. Toast the sweet potatoes until it’s done using the grill iron or toaster. You can check if it’s done by poking it with a fork and seeing if it became softer. I personally use a grill iron which takes about 5 minutes to cook the sweet potato. If you’re using a toaster it will take you about 4 toast sessions, depending on your toaster.
2. Spread the peanut butter on your toast and garnish with the slices of banana. For an extra treat top it off with cocoa nibs or raisins.
